If you’re anything like me, you’re probably still knee-deep in taxes, scrambling to find all your forms and receipts. But the light is at the end of the tunnel and it’s only getting brighter. I’m here to take care of the eating part.

This week, I’m in the mood for treats. The weather feels too good to eat boring meals. It’s also a time to celebrate the season’s best vegetables. Below you’ll find a nice selection of the delicious, the healthy, and the sweet.

For that night when you’re finally ready to celebrate being done with taxes, these deep dish pizzas will be the perfect celebration food. Head to the supermarket for your favorite toppings, or look in your fridge for things that aren’t going to make it another day and see if they’d make for a good pizza topping.

You should also check out my latest asparagus and artichoke salad. If ever there was a time to enjoy salads, it’s springtime. These two vegetables are some of my favorites to enjoy this time of year: so fresh and crisp. This goes perfectly with the lemon vinaigrette and a little arugula, but as always, feel free to change it up. Serve it with miso white beans or as a side with a pasta dish.

You may need a little pick-me-up at night to get you through the week. My double chocolate chip and orange cookies are a great plant-based treat to have on hand. They’re a cinch to make and can last throughout the week for that moment when you just need a cookie!

And finally, for another cheesy comfort food dinner, check out my Spinach Artichoke Mac n’Cheese. It’s the perfect one-pan meal that delivers on flavor. You won’t want to miss it.
